In our distillery, every bottle is a journey that honors our roots. From the patience of our jimadores in the fields to the patient maturation of our tequila in select barrels, we embrace a precision crafted path where human dedication and the slow passage of time work in perfect harmony.

Our process

Step 1: The Agave & The Water

Nourished by the Earth and the Volcano

Everything begins with the rigorous selection of Blue Weber agaves at their optimum point of maturity, grown in the rich soils of Jalisco. To guarantee a spirit of exceptional purity and a unique mineral profile, our entire production process is nourished exclusively with water drawn from our own deep well, fed naturally by aquifers originating from the Tequila Volcano.

Dual Capacity: Traditional Ovens and Modern Autoclaves

To convert agave starches into fermentable sugars, our distillery utilizes a versatile dual capacity system that balances tradition and technology.

Depending on the flavor profile we wish to achieve for each batch, we alternate between traditional ovens which allow for a slow steam cooking that deeply caramelizes the agave with rich, honeyed notes and modern autoclaves, designed for a uniform and highly controlled cooking that preserves the plant's fresh, herbal character.

This technical duality grants us absolute control over the spirit's profile, allowing us to design tequilas with exceptional aromatic richness and impeccable consistency.

Step 2: Dual Cooking
Step 3: Five-Step Milling

Extraction through a Five-Step Mill

Once the agave is cooked, the juice and essential sugars are extracted through a specialized milling system featuring a five step press (molino). During this pressing and washing process, we meticulously preserve and utilize the natural sedimentation of the agave.

By keeping these rich fibers and sediments within the juice, we achieve a much more complex must that delivers a robust body and an incredibly smooth texture to the final product.

100% Natural and Wild Fermentation

Unlike accelerated industrial processes, our fermentation is completely natural. We do not introduce cultivated yeasts or chemical accelerators. Instead, we allow the wild yeasts naturally present in the wind and the surrounding landscape of our distillery to colonize the tanks at their own pace.

This slow, spontaneous process allows nature to leave a complex and unique aromatic signature that is impossible to replicate in a laboratory.

Step 5: Dual Distillation

Double Distillation in Stainless Steel or Copper

We conduct a double distillation to purify the liquid and sculpt its character.

We design our profiles using two different technologies depending on the desired result: modern stainless steel stills, which provide an exceptionally clean, bright profile with high purity, or traditional copper pot stills, which retain essential oils to deliver a rich, heritage texture. Depending on the expression, we can utilize both systems or perform a master blend of both distillates.

Preserving Quality and Character

Our bottling process is the final and crucial stage to ensure that the purity and character of our tequila remain entirely intact. Every batch is carefully transferred, precisely filtered, and sealed under rigorous quality control standards. From the design of the bottle to the final packaging, every detail is meticulously supervised to guarantee that every drop of Tequilera Los Flores that reaches your table faithfully reflects our commitment to excellence and respect for our heritage.

Step 6: Maturation

Maturation in French Oak and Hungarian Oak

The final profile of our reposado and añejo expressions is defined within a rigorous selection of French oak and Hungarian oak barrels. By moving away from standard American oak, these European woods gradually impart structured notes of spices, dried fruits, and a subtle tannic complexity, granting the elegance and distinction that define the character of Tequilera Los Flores.
